Norbert Dudziński
A co-founder of Lalou Wines and co-owner of Lalou Wine Concept.
Wine is an inseparable element of the table in the European culture I want to belong to. Apart from the fact that wine ignites any conversation; makes food taste better, wine can also be the main topic of a meeting, something to wait for. Moreover, wine helps to naturally develop a specific mood, something I find charming: a natural, honest, energetic climate.
I worked as a sommelier in various restaurants for many years, caring for the guests' experience and comfort. I spent three years in Copenhagen, where I worked as a Head Sommelier in one of the best restaurants in the world - Geranium (3 Michelin stars). It was an essential and inspiring experience as I managed one of the world's largest and best wine collections. Scandinavia was also inspiring – an open and diverse region, avoiding snobbery sometimes associated with wine.
I specialize in several French regions: Burgundy, Champagne, Jura, and Loire Valley, as well as natural, biodynamic, and orange wines. These areas and categories give me the most fun, and I want to share this experience with others. That's why Lalou Wines was founded.
In 2020, I was awarded the Prix au Sommelier title by the International Academy of Gastronomy. I am a regular author for Magazyn o Winie Ferment and the ambassador of Starwine List in Poland - an international guide to the most exciting wine places. I have international certificates: A.S.I. Diploma, Court of Master Sommeliers, WSET.
